I have been out of my groove lately.
I’ve been in this funk that has been sucking me dry mentally. I’ve been happy enough going through my days. But at the end when I’ve been sitting down to right, I just feel like I have nothing left. Trudging on, I suppose.
Left foot, right foot. Left foot….
Cooking always makes me feel better. It’s just therapeutic. Relaxing. Calming.
So the past few days, I’ve been cooking up a storm. Using it as reflection time to figure out what the heck it is that’s been bothering me.
Let’s start with breakfast.
…I believe I’ve said enough.
The kids liked them with chocolate syrup, mini marshmallows, and a little whipped cream. I’m still a fan of regular old butter and syrup.

Cookies and Cream Pancakes
2 cups bisquick
1 cup milk
2 tsp vanilla
8 oreos, crushed
Preheat nonstick griddle. Mix together all ingredients. Using an ice cream scoop, spoon batter onto heated griddle, flipping when bubbles form.
